Fermentation transforms the ascorbic acid in yuzu into more stable forms (ascorbic acid glucoside, ascorbic acid metaphosphate) and releases brightening peptides. The pH drops to 4-4.5, ideal for the skin.

Yuzu (yuja) has been grown in Korea since the 8th century, mainly in Goheung. Its traditional fermentation for 'yuja-cha' (yuzu tea) in winter dates back to the Joseon dynasty. Its fermented cosmetic version dates from 2018.
